  • 1 lb (450g) boneless, skinless chicken breast or thighs, thinly sliced
  • 2 tbsp soy sauce (for marinating)
  • 1 tsp cornstarch (for marinating)
  • 2 tbsp vegetable oil
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 cup mushrooms, sliced (shiitake, button, or cremini)
  • 3 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 3 tbsp soy sauce (for sauce)
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tsp sesame oil
  • 1/4 cup water or chicken broth
  • 1 tsp cornstarch (to thicken sauce)
  • Salt and pepper to taste
  • Cooked rice, for serving

Instructions

  1. In a bowl, toss sliced chicken with 2 tbsp soy sauce and 1 tsp cornstarch. Set aside to marinate for 10–15 minutes.
  2. In a small bowl, mix the remaining soy sauce, oyster sauce, hoisin sauce, sesame oil, water, and 1 tsp cornstarch. Set aside.
  3. Heat 1 tbsp oil in a large skillet or wok over medium-high heat. Add chicken and stir-fry until just cooked through, about 4–5 minutes. Remove and set aside.
  4. Add remaining oil to the pan. Stir-fry garlic and ginger for 30 seconds until fragrant.
  5. Add broccoli, bell pepper, and mushrooms. Stir-fry for 4–5 minutes until vegetables are crisp-tender.
  6. Return chicken to the pan and pour in the sauce. Stir well to coat everything evenly.
  7. Cook for another 2–3 minutes until the sauce thickens and everything is heated through.
  8. Serve hot over cooked rice.

Notes

  • You can substitute vegetables based on what you have on hand, like snap peas or zucchini.
  • For extra heat, add a dash of chili flakes or sriracha.
  • Use low-sodium soy sauce to reduce saltiness.
