Strawberry Cake with Fresh Strawberry Frosting

A soft and moist strawberry cake made with real strawberries, topped with a luscious fresh strawberry frosting. Perfect for spring and summer celebrations.

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 2 teaspoons vanilla extract
  • 1 1/2 cups fresh strawberries, pureed
  • 1/2 cup fresh strawberries, diced (optional for texture)
  • 1/2 cup unsalted butter (for frosting)
  • 4 ounces cream cheese, softened (for frosting)
  • 1/3 cup fresh strawberry puree (for frosting)
  • 3 1/2 cups powdered sugar (for frosting)
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream together butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in sour cream, milk, and vanilla extract until combined.
  6. Stir in strawberry puree until incorporated. Fold in dry ingredients and diced strawberries if using.
  7. Divide batter evenly between prepared pans and bake for 30–35 minutes, or until a toothpick inserted comes out clean.
  8. Let cakes cool in pans for 10 minutes, then remove to wire racks to cool completely.
  9. For the frosting, beat butter and cream cheese until smooth and creamy.
  10. Add strawberry puree and vanilla, then gradually mix in powdered sugar until desired consistency is reached.
  11. Frost the cooled cakes and decorate with fresh strawberries if desired.

Notes

  • Use ripe, sweet strawberries for best flavor.
  • Frosting can be chilled briefly if too soft to spread.
  • Optional: Add a drop of red or pink food coloring to intensify cake or frosting color.
  • This cake can be made a day in advance and refrigerated.
