Strawberry Cheesecake Bars

Strawberry cheesecake bars are a creamy and fruity dessert with a buttery graham cracker crust, smooth cheesecake filling, and a sweet strawberry topping. Easy to make and perfect for slicing into portable treats.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1 1/2 cups fresh strawberries, chopped
  • 2 tablespoons sugar (for strawberry topping)
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 325°F (163°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until well combined. Press into the bottom of the pan to form a firm crust. Bake for 10 minutes, then set aside.
  3. In a large mixing bowl, beat the cream cheese and 1/2 cup sugar until smooth and creamy. Add eggs one at a time, beating well after each addition. Mix in vanilla and sour cream until fully incorporated.
  4. Pour the cheesecake filling over the baked crust and smooth the top.
  5. Bake for 30–35 minutes, or until the center is just set. Let cool completely at room temperature, then refrigerate for at least 3 hours.
  6. Meanwhile, prepare the strawberry topping: In a small saucepan, combine strawberries, 2 tablespoons sugar, and lemon juice. Cook over medium heat for 5–7 minutes until berries are soft and the mixture is syrupy. Let cool completely.
  7. Spread the cooled strawberry topping over the chilled cheesecake. Slice into bars and serve.

  • Ensure cream cheese is at room temperature to avoid lumps.
  • For a smoother texture, don’t overmix the batter once eggs are added.
  • Bars can be stored in the refrigerator for up to 4 days.
