- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 cup sour cream
- 1 1/2 cups fresh strawberries, chopped
- 2 tablespoons sugar (for strawberry topping)
- 1 tablespoon lemon juice
- Preheat oven to 325°F (163°C). Line an 8×8-inch baking pan with parchment paper.
- In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until well combined. Press into the bottom of the pan to form a firm crust. Bake for 10 minutes, then set aside.
- In a large mixing bowl, beat the cream cheese and 1/2 cup sugar until smooth and creamy. Add eggs one at a time, beating well after each addition. Mix in vanilla and sour cream until fully incorporated.
- Pour the cheesecake filling over the baked crust and smooth the top.
- Bake for 30–35 minutes, or until the center is just set. Let cool completely at room temperature, then refrigerate for at least 3 hours.
- Meanwhile, prepare the strawberry topping: In a small saucepan, combine strawberries, 2 tablespoons sugar, and lemon juice. Cook over medium heat for 5–7 minutes until berries are soft and the mixture is syrupy. Let cool completely.
- Spread the cooled strawberry topping over the chilled cheesecake. Slice into bars and serve.
