Strawberry Glazed Tart Bar

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1 cup fresh strawberries, hulled and chopped
  • 1/3 cup granulated sugar (for glaze)
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
  2. In a bowl, mix the flour, sugar, and salt. Cut in the softened butter until a crumbly dough forms.
  3. Press the dough evenly into the prepared baking pan to form the crust.
  4. Bake the crust for 15–18 minutes or until lightly golden.
  5. Meanwhile, in a saucepan, combine strawberries, sugar, lemon juice, and vanilla. Cook over medium heat until berries soften.
  6. Stir in cornstarch and continue cooking until the mixture thickens into a glaze.
  7. Spread the strawberry glaze evenly over the warm crust.
  8. Return to the oven and bake for an additional 10 minutes.
  9. Let cool completely before slicing into bars.

Notes

  • For a smoother glaze, blend the strawberries before cooking.
  • Chill the bars for cleaner slices.
  • Add a few sliced strawberries on top before baking for decoration.
