- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 tsp salt
- 3/4 cup unsalted butter, softened
- 1 cup fresh strawberries, hulled and chopped
- 1/3 cup granulated sugar (for glaze)
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 1 tsp vanilla extract
- Preheat the oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
- In a bowl, mix the flour, sugar, and salt. Cut in the softened butter until a crumbly dough forms.
- Press the dough evenly into the prepared baking pan to form the crust.
- Bake the crust for 15–18 minutes or until lightly golden.
- Meanwhile, in a saucepan, combine strawberries, sugar, lemon juice, and vanilla. Cook over medium heat until berries soften.
- Stir in cornstarch and continue cooking until the mixture thickens into a glaze.
- Spread the strawberry glaze evenly over the warm crust.
- Return to the oven and bake for an additional 10 minutes.
- Let cool completely before slicing into bars.
