- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar, divided
- 1 large egg
- 1 tsp vanilla extract
- 1/4 cup strawberry preserves
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1–2 drops pink or red food coloring (optional)
- 24 chocolate kiss candies, unwrapped
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the butter and 3/4 cup of the sugar until light and fluffy.
- Beat in the egg, vanilla extract, and strawberry preserves. Add food coloring if desired.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
- Roll dough into 1-inch balls and coat in the remaining 1/4 cup granulated sugar.
- Place on the baking sheet spaced apart and bake for 9–11 minutes until set.
- Immediately press a chocolate kiss into the center of each warm cookie.
- Cool completely to allow the chocolate to firm.
Notes
- Use seedless strawberry jam or puree for smoother texture.
- Freeze chocolate kisses beforehand to help them keep their shape.
- For extra strawberry flavor, add 1/4 tsp strawberry extract.
