Strawberry Pie

Strawberry Pie is a fresh and fruity dessert made with a buttery pie crust, juicy strawberries, and a glossy, sweet glaze. It’s perfect for spring and summer, especially when served with a dollop of whipped cream.

  • 1 9-inch pre-baked pie crust (homemade or store-bought)
  • 1 cup granulated sugar
  • 3 tbsp cornstarch
  • 1 cup water
  • 1 (3 oz) box strawberry gelatin (like Jell-O)
  • 4 cups fresh strawberries, hulled and halved
  • Whipped cream, for serving (optional)

Instructions

  1. In a medium saucepan, whisk together sugar and cornstarch. Add water and bring to a boil over medium heat, stirring constantly until thickened, about 3–5 minutes.
  2. Remove from heat and stir in the strawberry gelatin until completely dissolved. Let cool for 10–15 minutes.
  3. Arrange the fresh strawberries evenly in the pre-baked pie crust.
  4. Pour the gelatin mixture evenly over the strawberries, making sure they are well-coated.
  5. Refrigerate the pie for at least 4 hours, or until set.
  6. Serve chilled with whipped cream, if desired.

Notes

  • Use ripe, firm strawberries for best results.
  • To prevent a soggy crust, brush the baked pie crust with melted white chocolate before adding the filling.
  • Can be made a day ahead and stored in the refrigerator.
  • Try using a graham cracker crust for a no-bake alternative.
