- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tbsp olive oil
- 2 cups fresh spinach, chopped
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 tsp Italian seasoning
- 1/4 tsp red pepper flakes (optional)
- 1 tbsp lemon juice
- Toothpicks for securing rolls
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
- Place each chicken breast between parchment and pound to 1/4-inch thickness.
- Season both sides of the chicken with salt, pepper, and garlic powder.
- In a skillet, heat olive oil over medium heat and sauté spinach until wilted. Let cool slightly.
- In a bowl, combine cooked spinach with ricotta, mozzarella, Parmesan, Italian seasoning, red pepper flakes, and lemon juice.
- Spread a layer of the cheese-spinach mixture onto each flattened chicken breast.
- Roll the chicken tightly from the shortest side and secure with toothpicks.
- Place rolls seam-side down in the baking dish and bake for 25–30 minutes, or until the chicken is cooked through (internal temperature 165°F/74°C).
- Let rest for 5 minutes before slicing and serving.
