- 1 block (14 oz) firm tofu, pressed and cubed
 
- 2 tbsp soy sauce
 
- 1 tbsp maple syrup
 
- 1 tbsp apple cider vinegar
 
- 1 tbsp olive oil
 
- 1 tsp Dijon mustard
 
- 1/2 tsp smoked paprika
 
- Salt and pepper to taste
 
- 1 tbsp cornstarch (for coating tofu)
 
- 1 tbsp oil for frying
 
- For the Apple Chutney:
 
- 2 apples, peeled and diced
 
- 1/4 cup onion, finely chopped
 
- 1 tbsp fresh ginger, grated
 
- 2 tbsp brown sugar
 
- 2 tbsp apple cider vinegar
 
- 1/4 tsp cinnamon
 
- 1/4 tsp ground cloves
 
- 1/8 tsp chili flakes (optional)

- Preheat oven to 400°F (200°C) or heat a skillet over medium heat if pan-frying.
 
- In a bowl, whisk soy sauce, maple syrup, apple cider vinegar, olive oil, mustard, paprika, salt, and pepper to make the glaze.
 
- Toss tofu cubes with cornstarch to coat lightly.
 
- Heat oil in a nonstick pan and cook tofu until golden on all sides, or bake for 25–30 minutes, flipping halfway through.
 
- Pour glaze over tofu and cook for 2–3 minutes until caramelized and sticky. Remove from heat.
 
- To make the chutney, combine apples, onion, ginger, brown sugar, vinegar, cinnamon, cloves, chili flakes, and salt in a small saucepan.
 
- Simmer over medium heat for 15–20 minutes, stirring occasionally, until apples are soft and mixture is thickened.
 
- Serve warm tofu bites with apple chutney on the side or spooned over top. Garnish with fresh herbs if desired.
