  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1/2 cup sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 1 clove garlic, minced
  • 1 teaspoon grated fresh ginger (optional)
  • Green onions and sesame seeds for garnish (optional)

Instructions

  1. In a bowl, toss chicken pieces with cornstarch, salt, and pepper until evenly coated.
  2. Heat vegetable oil in a large skillet over medium-high heat.
  3. Add chicken and cook for 6–8 minutes, turning occasionally, until golden brown and cooked through.
  4. In a small bowl, mix sweet chili sauce, soy sauce, rice vinegar, garlic, and ginger.
  5. Reduce heat to medium, pour sauce over cooked chicken, and stir to coat.
  6. Simmer for 2–3 minutes until the sauce thickens and glazes the chicken.
  7. Garnish with green onions and sesame seeds if desired. Serve hot.
