Sweet Potato Tacos with Avocado & Pickled Onions

This Skillet Garlic Butter Chicken with Basil Sauce is a rich, aromatic dish that combines tender chicken breasts seared to golden perfection and smothered in a garlic-infused butter sauce with a fresh basil finish.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth or dry white wine
  • 1/4 cup fresh basil leaves, chopped
  • 1 tablespoon lemon juice (optional)

Instructions

  1. Season chicken breasts on both sides with salt and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4–5 minutes per side, or until golden brown and cooked through. Transfer to a plate and cover.
  3. Reduce heat to medium. In the same skillet, melt butter and add garlic. Cook for 1 minute until fragrant.
  4. Deglaze the pan with chicken broth or white wine, scraping up any browned bits.
  5. Stir in fresh chopped basil and lemon juice if using. Simmer for 2–3 minutes to blend the flavors.
  6. Return chicken to the skillet, spoon sauce over the top, and cook for another 2 minutes until heated through.
  7. Serve immediately, spooning extra basil butter sauce over the chicken.

Notes

  • Use chicken thighs for a juicier option.
  • Add a splash of cream or crème fraîche for a creamy version.
  • Include cherry tomatoes or spinach for added nutrients and color.
  • Add red pepper flakes for a spicy twist.
  • Substitute with vegan butter for a dairy-free version.
  • Store leftovers in the fridge for up to 3 days; reheat with a splash of broth.
  • Fresh basil is preferred, but 1 tsp dried basil may be used.
