Tomato Basil Bruschetta

- 4 ripe tomatoes, diced
- 1/4 cup fresh basil leaves, chopped
- 2 cloves garlic, minced
- 1 tablespoon balsamic vinegar
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
- 1 baguette, sliced
- 1 tablespoon olive oil (for brushing bread)
- Preheat oven to 400°F (200°C).
- In a medium bowl, combine diced tomatoes, chopped basil, minced garlic, balsamic vinegar, olive oil, salt, and pepper. Mix well and let sit for 10–15 minutes to blend flavors.
- Place baguette slices on a baking sheet and brush lightly with olive oil.
- Toast the bread in the oven for 5–7 minutes or until golden and crisp.
- Remove bread from oven and let cool slightly.
- Spoon the tomato mixture onto each toasted baguette slice just before serving.
Notes
- Use the freshest tomatoes and basil for the best flavor.
- Optionally rub toasted bread with a cut garlic clove for extra aroma.
- Serve immediately to prevent soggy bread.
