Tuscan White Bean Skillet with Mozzarella is a rustic and hearty vegetarian dish featuring creamy white beans simmered in a garlicky tomato sauce, finished with melted mozzarella and fresh herbs.

  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley, chopped (for garnish)
  • Optional: crusty bread for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and cook until soft and translucent, about 5 minutes.
  3. Stir in minced garlic and cook for another 1–2 minutes until fragrant.
  4. Add diced tomatoes, white beans, Italian seasoning, red pepper flakes (if using), salt, and pepper. Stir to combine.
  5. Simmer uncovered for 10–15 minutes, allowing the flavors to blend and sauce to thicken slightly.
  6. Sprinkle mozzarella cheese evenly over the top.
  7. Cover the skillet and cook for 2–3 minutes, or until the cheese is melted and bubbly.
  8. Remove from heat and garnish with chopped basil or parsley.
  9. Serve hot, with crusty bread if desired.
