- 1 cup unsweetened cocoa powder
- 2 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 3/4 cup unsalted butter, softened
- 2 1/2 cups granulated sugar
- 4 large eggs
- 1 tablespoon vanilla extract
- 1 cup sour cream
- 1 cup whole milk
- 1 cup hot water or brewed coffee
- 1 1/2 cups unsalted butter (for frosting)
- 1 cup unsweetened cocoa powder (for frosting)
- 5 cups powdered sugar
- 1/2 cup whole milk or heavy cream (for frosting)
- 2 teaspoons vanilla extract (for frosting)
- Pinch of salt (for frosting)
- Preheat oven to 350°F (175°C). Grease and line three 8-inch cake pans with parchment paper.
- In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, beat butter and sugar until light and fluffy.
- Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
- Stir in sour cream, then alternate adding dry ingredients and milk until fully incorporated.
- Slowly mix in hot water or coffee until batter is smooth (batter will be thin).
- Divide batter evenly among prepared pans and bake for 30–35 minutes or until a toothpick comes out clean.
- Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely.
- To make frosting, beat butter until fluffy. Add cocoa powder and mix until combined.
- Gradually beat in powdered sugar, milk, vanilla, and a pinch of salt until smooth and creamy.
- Level cake layers if needed. Place one layer on a cake board, spread with frosting, and repeat with remaining layers.
- Frost the top and sides of the cake with remaining frosting. Decorate as desired.
