  • 4 large eggs
  • 1 tablespoon vanilla extract
  • 1 cup sour cream
  • 1 cup whole milk
  • 1 cup hot water or brewed coffee
  • 1 1/2 cups unsalted butter (for frosting)
  • 1 cup unsweetened cocoa powder (for frosting)
  • 5 cups powdered sugar
  • 1/2 cup whole milk or heavy cream (for frosting)
  • 2 teaspoons vanilla extract (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line three 8-inch cake pans with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  5. Stir in sour cream, then alternate adding dry ingredients and milk until fully incorporated.
  6. Slowly mix in hot water or coffee until batter is smooth (batter will be thin).
  7. Divide batter evenly among prepared pans and bake for 30–35 minutes or until a toothpick comes out clean.
  8. Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely.
  9. To make frosting, beat butter until fluffy. Add cocoa powder and mix until combined.
  10. Gradually beat in powdered sugar, milk, vanilla, and a pinch of salt until smooth and creamy.
  11. Level cake layers if needed. Place one layer on a cake board, spread with frosting, and repeat with remaining layers.
  12. Frost the top and sides of the cake with remaining frosting. Decorate as desired.

Notes

  • Use high-quality cocoa powder for best flavor.
  • Cake layers can be made a day ahead and refrigerated.
  • Let frosting come to room temperature before using if made ahead.
