Vegetable and Potato Skillet Stir-Fry

A hearty and flavorful vegetable and potato skillet stir-fry made with crispy potatoes, colorful veggies, and simple seasonings for a quick meal or side dish.

Ingredients

  • 3 medium potatoes, diced
  • 2 tbsp olive oil
  • 1 small onion, sliced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 1 tbsp soy sauce (optional)
  • Fresh parsley for garnish

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add diced potatoes and cook for 10–12 minutes, stirring occasionally, until golden and tender.
  2. Remove potatoes from the skillet and set aside.
  3. Add the remaining tablespoon of oil to the skillet. Add onion, bell pepper, zucchini, and broccoli. Stir-fry for 5–6 minutes until vegetables are tender-crisp.
  4. Stir in garlic, smoked paprika, oregano, salt, and pepper. Cook for 1 minute until fragrant.
  5. Return potatoes to the skillet and add soy sauce if using. Toss everything together and cook for another 2 minutes.
  6. Garnish with fresh parsley and serve warm.

Notes

  • Use sweet potatoes instead of regular potatoes for added sweetness.
  • Add mushrooms or spinach for extra vegetables.
  • Top with a fried egg to turn it into a complete meal.
