Vegetable Lo Mein

A quick and flavorful Chinese-inspired noodle dish made with stir-fried vegetables and lo mein noodles tossed in a savory soy-based sauce.

Ingredients

  • 400g lo mein noodles or spaghetti
  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 carrot, julienned
  • 1 red bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1/2 cup snap peas or snow peas
  • 2 green onions, sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 tablespoon hoisin sauce
  • 1 teaspoon rice vinegar
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • Toasted sesame seeds for garnish (optional)

Instructions

  1. Cook noodles according to package instructions. Drain and set aside.
  2. In a small bowl, mix soy sauce, oyster sauce (if using), hoisin sauce, rice vinegar, and sugar. Set aside.
  3. Heat sesame oil in a large skillet or wok over medium-high heat.
  4. Add garlic and ginger, stir-fry for 30 seconds until fragrant.
  5. Add carrots, bell pepper, broccoli, and snap peas. Stir-fry for 4-5 minutes until vegetables are just tender but still crisp.
  6. Add cooked noodles and sauce mixture to the pan. Toss everything together to coat evenly and heat through.
  7. Stir in green onions and season with salt and pepper to taste.
  8. Serve hot, garnished with toasted sesame seeds if desired.

Notes

  • Customize with any seasonal vegetables you have on hand.
  • Use low-sodium soy sauce to control saltiness.
  • For a gluten-free version, use tamari and rice noodles.
  • Add tofu or tempeh for extra protein.
