Vodka Pasta Recipe

Vodka Pasta is a creamy, savory Italian-American dish made with a smooth tomato and cream sauce enhanced by a splash of vodka, adding depth of flavor. Perfect for weeknight dinners or entertaining guests.

  • 12 oz pasta (penne or rigatoni preferred)
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 tsp red pepper flakes (optional)
  • 1/4 cup vodka
  • 1 can (15 oz) crushed tomatoes
  • 1/2 cup heavy cream
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese (plus more for serving)
  • 2 tbsp unsalted butter
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Cook pasta according to package instructions until al dente. Reserve 1/2 cup pasta water, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add garlic and red pepper flakes, sauté for 1 minute.
  4. Pour in vodka and let it simmer for 2-3 minutes to reduce slightly.
  5. Add crushed tomatoes, stir well, and simmer for 10 minutes to develop flavor.
  6. Stir in heavy cream and season with salt and pepper. Let simmer for 2-3 minutes.
  7. Add cooked pasta to the sauce along with butter and Parmesan cheese. Toss to coat, adding reserved pasta water as needed to loosen the sauce.
  8. Garnish with more Parmesan and fresh herbs. Serve immediately.

Notes

  • Vodka helps emulsify the sauce and enhance the tomato flavor, but can be omitted or substituted with water or broth if desired.
  • Add grilled chicken, shrimp, or pancetta for a protein boost.
  • Use high-quality tomatoes for the best sauce flavor.
