  • 8 oz white chocolate, chopped or white chocolate chips

Instructions

  1. In a bowl, mix pumpkin puree, cream cheese, powdered sugar, pumpkin pie spice, vanilla, and salt until smooth.
  2. Stir in cookie crumbs until fully combined and mixture holds together.
  3. Refrigerate for 30 minutes to firm up.
  4. Roll mixture into small bite-sized balls and place on a parchment-lined tray.
  5. Chill balls in the freezer for 15–20 minutes.
  6. Melt white chocolate in a microwave-safe bowl or double boiler until smooth.
  7. Dip each chilled ball into the melted white chocolate, then return to tray.
  8. Sprinkle with optional toppings before chocolate sets, if desired.
  9. Chill until chocolate is firm. Store in the refrigerator.
