- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or homemade equivalent)
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (15 oz) diced tomatoes
- 1 can (10 oz) Rotel (diced tomatoes with green chilies)
- 2 cups beef broth
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, avocado, cilantro, tortilla chips
- Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 3–4 minutes.
- Add garlic and cook for 1 more minute until fragrant.
- Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.
- Stir in taco seasoning and mix well to coat the meat.
- Add black beans, corn, diced tomatoes, Rotel, and beef broth. Stir to combine.
- Bring soup to a boil, then reduce heat and simmer for 20–25 minutes to blend flavors.
- Season with salt and pepper to taste.
- Serve hot with your favorite toppings like cheese, sour cream, avocado, or tortilla chips.
