Loaded Taco Soup with Ground Beef and Black Beans

A hearty and flavorful taco soup loaded with seasoned ground beef, black beans, corn, and tomatoes. Perfect for a comforting weeknight dinner or game-day favorite.

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or homemade equivalent)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) diced tomatoes
  • 1 can (10 oz) Rotel (diced tomatoes with green chilies)
  • 2 cups beef broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, avocado, cilantro, tortilla chips

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 3–4 minutes.
  2. Add garlic and cook for 1 more minute until fragrant.
  3. Add ground beef and cook until browned, breaking it apart with a spoon. Drain excess fat if necessary.
  4. Stir in taco seasoning and mix well to coat the meat.
  5. Add black beans, corn, diced tomatoes, Rotel, and beef broth. Stir to combine.
  6. Bring soup to a boil, then reduce heat and simmer for 20–25 minutes to blend flavors.
  7. Season with salt and pepper to taste.
  8. Serve hot with your favorite toppings like cheese, sour cream, avocado, or tortilla chips.

Notes

  • For a spicier soup, add extra chili powder or a diced jalapeño.
  • Make it ahead and store in the fridge for up to 4 days or freeze for longer storage.
  • Use ground turkey or chicken as a leaner protein option.
